Who We Are

The husband and wife culinary team of Mary and Cary Zapatka have made their mark on the Lowcountry food scene since the last century.

Prior to opening the Square Onion in January of 2003, Cary (a Georgia Bulldog grad) honed his skills working in some of the top restaurants in the Charleston, SC. area. Now, well at home in the Square Onion kitchen, Cary keeps his hand in the day-to-day preparations and ensures that the “Onion” continues to be known for great, consistent food.

Mary, a Greenville native and CofC grad, has stayed active in Charleston’s food and beverage industry since the school days. Mary worked her way up to General Manager at the acclaimed Magnolia’s Restaurant in downtown Charleston, and was instrumental in architecting the modern but truly southern Cypress Restaurant on East Bay Street in Charleston, SC. One for never sitting still, Mary is also currently employing her know-how as a key staff member with the nationally recognized Charleston Wine & Food Festival.

Together, they create some awesome local food for all who walk through the door of the Square Onion.
